Lemon Rice
Ingredients
* Cooked Parboiled Rice – 2 cups (Each grain should be separate)
* Lemon Juice – 2 tbsps, freshly squeezed
* Turmeric Powder – 1/8 tsp
* Green Chillies – 2, slit
* Fresh Curry Leaves – 5 to 8 leaves
* Mustard Seeds – 1/2 tsp
* Split Gram Dal (Urad Dal) – 1/2 tsp
* Bengal Gram (Chana Dal) – 1 1/2 tsp
* Asafoetida – 1/4 tsp
* Oil – 2 tsps
* Salt to taste
Method
Heat oil in a pan, add mustard seeds and when they stary to splutter add urad dal and chana dal.
After few seconds when the urad dal turns light brown in color, add green chillies, curry leaves, asafoetida, turmeric powder and salt.
After 40 seconds turn off the stove, add lemon juice and stir well.
Add cooked rice and mix well, check for salt and add if required.
Serve with pappadam or paruppu thogayal(recipe comin soon).
